Crispy Green Tomatoes with Horseradish

2 eggs
¼ cup buttermilk
½ cup bread crumbs
½ cup cornmeal
¼ teaspoon salt
1½ pounds (680 g) firm green tomatoes, cut into ¼-inch slices
Cooking spray
Horseradish Sauce:
¼ cup sour cream
¼ cup mayonnaise
2 teaspoons prepared horseradish
½ teaspoon lemon juice
½ teaspoon Worcestershire sauce
⅛ teaspoon black pepper
- Spritz the air fryer basket with cooking spray. Set aside.
- In a small bowl, whisk together all the ingredients for the horseradish sauce until smooth. Set aside.
- In a shallow dish, beat the eggs and buttermilk.
- In a separate shallow dish, thoroughly combine the bread crumbs, cornmeal, and salt.
- Dredge the tomato slices, one at a time, in the egg mixture, then roll in the bread crumb mixture until evenly coated.
- Place the tomato slices in the basket in a single layer. Spray them with cooking spray.
- Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC), and set time to 13 minutes.
- Flip the tomato slices halfway through the cooking time.
- When cooking is complete, the tomato slices should be nicely browned and crisp. Remove from the oven to a platter and serve drizzled with the prepared horseradish sauce.
