Apple-Peach Crisp with Oatmeal
Prep time: 10 minutes | Cook time: 10 to 12 minutes | Serves 4
2 peaches, peeled, pitted, and chopped
1 apple, peeled and chopped
2 tablespoons honey
3 tablespoons packed brown sugar
2 tablespoons unsalted butter, at room temperature
½ cup quick-cooking oatmeal
¹⁄₃ cup whole-wheat pastry flour
½ teaspoon ground cinnamon
  1. Place the peaches, apple, and honey in the baking pan and toss until thoroughly combined.
  2. Mix together the brown sugar, butter, oatmeal, pastry flour, and cinnamon in a medium bowl and stir until crumbly. Sprinkle this mixture generously on top of the peaches and apples.
  3. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 380ºF (193ºC), and set the time to 10 minutes.
  4. Bake until the fruit is bubbling and the topping is golden brown.
  5. Once cooking is complete, remove from the oven and allow to cool for 5 minutes before serving.
