Ultimate Coconut Chocolate Cake

1¼ cups unsweetened bakers’ chocolate
1 stick butter
1 teaspoon liquid stevia
¹⁄₃ cup shredded coconut
2 tablespoons coconut milk
2 eggs, beaten
Cooking spray
  1. Lightly spritz the baking pan with cooking spray.
  2. Place the chocolate, butter, and stevia in a microwave-safe bowl. Microwave for about 30 seconds until melted. Let the chocolate mixture cool to room temperature.
  3. Add the remaining ingredients to the chocolate mixture and stir until well incorporated. Pour the batter into the prepared baking pan.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 330ºF (166ºC), and set time to 15 minutes.
  5. When cooking is complete, a toothpick inserted in the center should come out clean.
  6. Remove from the oven and allow to cool for about 10 minutes before serving.
