Prep time: 15 minutes | Cook time: 26 minutes | Serves 8
1½ cups sugar
½ cup self-rising flour
¹⁄₃ cup unsweetened cocoa powder
3 large eggs, beaten
12 tablespoons (1½ sticks) butter, melted
1½ teaspoons vanilla extract
1 (9-inch) unbaked pie crust
¼ cup confectioners’ sugar (optional)

Thoroughly combine the sugar, flour, and cocoa powder in a medium bowl. Add the beaten eggs and butter and whisk to combine. Stir in the vanilla.

Pour the prepared filling into the pie crust and transfer to the baking pan.

Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC), and set time to 26 minutes.

When cooking is complete, the pie should be set.

Allow the pie to cool for 5 minutes. Sprinkle with the confectioners’ sugar, if desired. Serve warm.
