Easy Blackberry Cobbler
Prep time: 15 minutes | Cook time: 20 to 25 minutes | Serves 6
3 cups fresh or frozen blackberries
1¾ cups sugar, divided
1 teaspoon vanilla extract
8 tablespoons (1 stick) butter, melted
1 cup self-rising flour
Cooking spray
  1. Spritz the baking pan with cooking spray.
  2. Mix the blackberries, 1 cup of sugar, and vanilla in a medium bowl and stir to combine.
  3. Stir together the melted butter, remaining sugar, and flour in a separate medium bowl.
  4. Spread the blackberry mixture evenly in the prepared pan and top with the butter mixture.
  5. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC), and set time to 25 minutes.
  6. After about 20 minutes, check if the cobbler has a golden crust and you can't see any batter bubbling while it cooks. If needed, bake for another 5 minutes.
  7. Remove from the oven and place on a wire rack to cool to room temperature. Serve immediately.
