Crispy Pineapple Rings
Prep time: 5 minutes | Cook time: 7 minutes | Serves 6
1 cup rice milk
²⁄₃ cup flour
½ cup water
¼ cup unsweetened flaked coconut
4 tablespoons sugar
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon vanilla essence
½ teaspoon ground cinnamon
¼ teaspoon ground anise star
Pinch of kosher salt
1 medium pineapple, peeled and sliced
  1. In a large bowl, stir together all the ingredients except the pineapple.
  2. Dip each pineapple slice into the batter until evenly coated.
  3. Arrange the pineapple slices in the air fryer basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC), and set time to 7 minutes.
  5. When cooking is complete, the pineapple rings should be golden brown.
  6. Remove from the oven to a plate and cool for 5 minutes before serving.
