Apple Fritter s
Prep time: 30 minutes | Cook time: 7 minutes | Serves 6
1 cup chopped, peeled Granny Smith apple
½ cup granulated sugar
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons milk
2 tablespoons butter, melted
1 large egg, beaten
Cooking spray
¼ cup confectioners’ sugar (optional)
  1. Mix together the apple, granulated sugar, and cinnamon in a small bowl. Allow to sit for 30 minutes.
  2. Combine the flour, baking powder, and salt in a medium bowl. Add the milk, butter, and egg and stir to incorporate.
  3. Pour the apple mixture into the bowl of flour mixture and stir with a spatula until a dough forms.
  4. Make the fritters: On a clean work surface, divide the dough into 12 equal portions and shape into 1-inch balls. Flatten them into patties with your hands.
  5. Line the baking pan with parchment paper and spray it with cooking spray.
  6. Transfer the apple fritters onto the parchment paper, evenly spaced but not too close together. Spray the fritters with cooking spray.
  7. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC), and set time to 7 minutes.
  8. Flip the fritters halfway through the cooking time.
  9. When cooking is complete, the fritters should be lightly browned.
  10. Remove from the oven to a plate and serve with the confectioners’ sugar sprinkled on top, if desired.
