Apple Wedges with Apricots
Prep time: 5 minutes | Cook time: 15 to 18 minutes | Serves 4
4 large apples, peeled and sliced into 8 wedges
2 tablespoons olive oil
½ cup dried apricots, chopped
1 to 2 tablespoons sugar
½ teaspoon ground cinnamon
  1. Toss the apple wedges with the olive oil in a mixing bowl until well coated.
  2. Place the apple wedges in the air fryer basket.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC), and set time to 15 minutes.
  4. After about 12 minutes, remove from the oven. Sprinkle with the dried apricots and air fry for another 3 minutes.
  5. Meanwhile, thoroughly combine the sugar and cinnamon in a small bowl.
  6. Remove the apple wedges from the oven to a plate. Serve sprinkled with the sugar mixture.
Almond Flour Blackberry Muffins
Prep time: 5 minutes | Cook time: 12 minutes | Serves 8
½ cup fresh blackberries
Dry Ingredients:
1½ cups almond flour
1 teaspoon baking powder
½ teaspoon baking soda
½ cup Swerve
¼ teaspoon kosher salt
Wet Ingredients:
2 eggs
¼ cup coconut oil, melted
½ cup milk
½ teaspoon vanilla paste
  1. Line an 8-cup muffin tin with paper liners.
  2. Thoroughly combine the almond flour, baking powder, baking soda, Swerve, and salt in a mixing bowl.
  3. Whisk together the eggs, coconut oil, milk, and vanilla in a separate mixing bowl until smooth.
  4. Add the wet mixture to the dry and fold in the blackberries. Stir with a spatula just until well incorporated.
  5. Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
  6. Put the muffin tin into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC), and set time to 12 minutes.
  7. When done, the tops should be golden and a toothpick inserted in the middle should come out clean.
  8. Allow the muffins to cool in the muffin tin for 10 minutes before removing and serving
