Apple-Peach Crumble with Honey
Prep time: 10 minutes | Cook time: 11 minutes | Serves 4
1 apple, peeled and chopped
2 peaches, peeled, pitted, and chopped
2 tablespoons honey
½ cup quick-cooking oatmeal
¹⁄₃ cup whole-wheat pastry flour
2 tablespoons unsalted butter, at room temperature
3 tablespoons packed brown sugar
½ teaspoon ground cinnamon
  1. Mix together the apple, peaches, and honey in the baking pan until well incorporated.
  2. In a bowl, combine the oatmeal, pastry flour, butter, brown sugar, and cinnamon and stir to mix well. Spread this mixture evenly over the fruit.
  3. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 380ºF (193ºC), and set time to 11 minutes. 
  4. When cooking is complete, the fruit should be bubbling around the edges and the topping should be golden brown.
  5. Remove from the oven and serve warm.
