Berry Crumble
Prep time: 5 minutes | Cook time: 35 minutes | Serves 6
2 ounces (57 g) unsweetened mixed berries
½ cup granulated Swerve
2 tablespoons golden flaxseed meal
1 teaspoon xanthan gum
½ teaspoon ground cinnamon
¼ teaspoon ground star anise
Topping:
½ stick butter, cut into small pieces
1 cup powdered Swerve
²⁄₃ cup almond flour
¹⁄₃ cup unsweetened coconut, finely shredded
½ teaspoon baking powder
Cooking spray
  1. Coat 6 ramekins with cooking spray.
  2. In a mixing dish, stir together the mixed berries, granulated Swerve, flaxseed meal, xanthan gum, cinnamon, star anise. Divide the berry mixture evenly among the prepared ramekins.
  3. Combine the remaining ingredients in a separate mixing dish and stir well. Scatter the topping over the berry mixture.
  4. Put the ramekins into Rack Position 1, select Convection Bake, set temperature to 330ºF (166ºC), and set time to 35 minutes.
  5. When done, the topping should be golden brown.
  6. Serve warm.
