Pastrami Casserole

1 cup pastrami, sliced
1 bell pepper, chopped
¼ cup Greek yogurt
2 spring onions, chopped
½ cup Cheddar cheese, grated
4 eggs
¼ teaspoon ground black pepper
Sea salt, to taste
Cooking spray

Spritz the baking pan with cooking spray.

Whisk together all the ingredients in a large bowl. Stir to mix well. Pour the mixture into the baking pan.

Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 330ºF (166ºC) and set time to 8 minutes.

When cooking is complete, the eggs should be set and the casserole edges should be lightly browned.

Remove from the oven and allow to cool for 10 minutes before serving.
