Taco Beef and Chile Casserole
Prep time: 10 minutes | Cook time: 15 minutes | Serves 4
1 pound (454 g) 85% lean ground beef
1 tablespoon taco seasoning
1 (7-ounce / 198-g) can diced mild green chiles
½ cup milk
2 large eggs
1 cup shredded Mexican cheese blend
2 tablespoons all-purpose flour
½ teaspoon kosher salt
Cooking spray
  1. Spritz the baking pan with cooking spray.
  2. Toss the ground beef with taco seasoning in a large bowl to mix well. Pour the seasoned ground beef in the prepared baking pan.
  3. Combing the remaining ingredients in a medium bowl. Whisk to mix well, then pour the mixture over the ground beef.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC) and set time to 15 minutes.
  5. When cooking is complete, a toothpick inserted in the center should come out clean.
  6. Remove the casserole from the oven and allow to cool for 5 minutes, then slice to serve.
