Sausage and Colorful Peppers Casserole
Prep time: 15 minutes | Cook time: 25 minutes | Serves 6
1 pound (454 g) minced breakfast sausage
1 yellow pepper, diced
1 red pepper, diced
1 green pepper, diced
1 sweet onion, diced
2 cups Cheddar cheese, shredded
6 eggs
Salt and freshly ground black pepper, to taste
Fresh parsley, for garnish
  1. Cook the sausage in a nonstick skillet over medium heat for 10 minutes or until well browned. Stir constantly.
  2. When the cooking is finished, transfer the cooked sausage to the baking pan and add the peppers and onion. Scatter with Cheddar cheese.
  3. Whisk the eggs with salt and ground black pepper in a large bowl, then pour the mixture into the baking pan.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 360ºF (182ºC) and set time to 15 minutes.
  5. When cooking is complete, the egg should be set and the edges of the casserole should be lightly browned.
  6. Remove from the oven and top with fresh parsley before serving.
