Goat Cheese and Asparagus Frittata
Prep time: 5 minutes | Cook time: 25 minutes | Serves 2 to 4
1 cup asparagus spears, cut into 1-inch pieces
1 teaspoon vegetable oil
1 tablespoon milk
6 eggs, beaten
2 ounces (57 g) goat cheese, crumbled
1 tablespoon minced chives, optional
Kosher salt and pepper, to taste
  1. Add the asparagus spears to a small bowl and drizzle with the vegetable oil. Toss until well coated and transfer to the air fryer basket.
  2. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 5 minutes.
  3. Flip the asparagus halfway through.
  4. When cooking is complete, the asparagus should be tender and slightly wilted.
  5. Remove from the oven to the baking pan.
  6. Stir together the milk and eggs in a medium bowl. Pour the mixture over the asparagus in the pan. Sprinkle with the goat cheese and the chives (if using) over the eggs. Season with salt and pepper.
  7. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 320ºF (160ºC) and set time to 20 minutes.
  8. When cooking is complete, the top should be golden and the eggs should be set.
  9. Transfer to a serving dish. Slice and serve.
