Baja Fish Taco

1 egg
5 ounces (142 g) Mexican beer
¾ cup all-purpose flour
¾ cup cornstarch
¼ teaspoon chili powder
½ teaspoon ground cumin
½ pound (227 g) cod, cut into large pieces
6 corn tortillas
Cooking spray
Salsa:
1 mango, peeled and diced
¼ red bell pepper, diced
½ small jalapeño, diced
¼ red onion, minced
Juice of half a lime
Pinch chopped fresh cilantro
¼ teaspoon salt
¼ teaspoon ground black pepper

Spritz the air fryer basket with cooking spray.

Whisk the egg with beer in a bowl. Combine the flour, cornstarch, chili powder, and cumin in a separate bowl.

Dredge the cod in the egg mixture first, then in the flour mixture to coat well. Shake the excess off.

Arrange the cod in the basket and spritz with cooking spray.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC) and set time to 17 minutes.

Flip the cod halfway through the cooking time.

When cooked, the cod should be golden brown and crunchy.

Meanwhile, combine the ingredients for the salsa in a small bowl. Stir to mix well.

Unfold the tortillas on a clean work surface, then divide the fish on the tortillas and spread the salsa on top. Fold to serve.
