Korean Flavor Beef and Onion Tacos

2 tablespoons gochujang
1 tablespoon soy sauce
2 tablespoons sesame seeds
2 teaspoons minced fresh ginger
2 cloves garlic, minced
2 tablespoons toasted sesame oil
2 teaspoons sugar
½ teaspoon kosher salt
1½ pounds (680 g) thinly sliced beef chuck
1 medium red onion, sliced
6 corn tortillas, warmed
¼ cup chopped fresh cilantro
½ cup kimchi
½ cup chopped green onions
- Combine the gochujang, soy sauce, sesame seeds, ginger, garlic, sesame oil, sugar, and salt in a large bowl. Stir to mix well.
- Dunk the beef chunk in the large bowl. Press to submerge, then wrap the bowl in plastic and refrigerate to marinate for at least 1 hour.
- Remove the beef chunk from the marinade and transfer to the air fryer basket. Add the onion to the pan.
- Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 12 minutes.
- Stir the mixture halfway through the cooking time.
- When cooked, the beef will be well browned.
- Unfold the tortillas on a clean work surface, then divide the fried beef and onion on the tortillas. Spread the cilantro, kimchi, and green onions on top.
- Serve immediately.
