Golden Cod Tacos with Salsa
Prep time: 5 minutes | Cook time: 15 minutes | Serves 4
2 eggs
1¼ cups Mexican beer
1½ cups coconut flour
1½ cups almond flour
½ tablespoon chili powder
1 tablespoon cumin
Salt, to taste
1 pound (454 g) cod fillet, slice into large pieces
4 toasted corn tortillas
4 large lettuce leaves, chopped
¼ cup salsa
Cooking spray

Spritz the air fryer basket with cooking spray.

Break the eggs in a bowl, then pour in the beer. Whisk to combine well.

Combine the coconut flour, almond flour, chili powder, cumin, and salt in a separate bowl. Stir to mix well.

Dunk the cod pieces in the egg mixture, then shake the excess off and dredge into the flour mixture to coat well. Arrange the cod in the pan.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC) and set time to 15 minutes.

Flip the cod halfway through the cooking time.

When cooking is complete, the cod should be golden brown.

Unwrap the toasted tortillas on a large plate, then divide the cod and lettuce leaves on top. Baste with salsa and wrap to serve.
