Avocado and Tomato Egg Rolls
Prep time: 10 minutes | Cook time: 5 minutes | Serves 5
10 egg roll wrappers
3 avocados, peeled and pitted
1 tomato, diced
Salt and ground black pepper, to taste
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Put the tomato and avocados in a food processor. Sprinkle with salt and ground black pepper. Pulse to mix and coarsely mash until smooth.
  3. Unfold the wrappers on a clean work surface, then divide the mixture in the center of each wrapper. Roll the wrapper up and press to seal.
  4. Transfer the rolls to the pan and spritz with cooking spray.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC) and set time to 5 minutes.
  6. Flip the rolls halfway through the cooking time.
  7. When cooked, the rolls should be golden brown.
  8. Serve immediately.
