Eggplant Hoagie s
Prep time: 15 minutes | Cook time: 12 minutes | Makes 3 hoagies
6 peeled eggplant slices (about ½ inch thick and 3 inches in diameter)
¼ cup jarred pizza sauce
6 tablespoons grated Parmesan cheese
3 Italian sub rolls, split open lengthwise, warmed
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Arrange the eggplant slices in the pan and spritz with cooking spray.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC) and set time to 10 minutes.
  4. Flip the slices halfway through the cooking time.
  5. When cooked, the eggplant slices should be lightly wilted and tender.
  6. Divide and spread the pizza sauce and cheese on top of the eggplant slice
  7. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC) and set time to 2 minutes.
  8. When cooked, the cheese will be melted.
  9. Assemble each sub roll with two slices of eggplant and serve immediately.
