Pea and Potato Samosas with Chutney
Prep time: 30 minutes | Cook time: 22 minutes | Makes 16 samosas
Dough:
4 cups all-purpose flour, plus more for flouring the work surface
¼ cup plain yogurt
½ cup cold unsalted butter, cut into cubes
2 teaspoons kosher salt
1 cup ice water
Filling:
2 tablespoons vegetable oil
1 onion, diced
1½ teaspoons coriander
1½ teaspoons cumin
1 clove garlic, minced
1 teaspoon turmeric
1 teaspoon kosher salt
½ cup peas, thawed if frozen
2 cups mashed potatoes
2 tablespoons yogurt
Cooking spray
Chutney:
1 cup mint leaves, lightly packed
2 cups cilantro leaves, lightly packed
1 green chile pepper, deseeded and minced
½ cup minced onion
Juice of 1 lime
1 teaspoon granulated sugar
1 teaspoon kosher salt
2 tablespoons vegetable oil

Put the flour, yogurt, butter, and salt in a food processor. Pulse to combine until grainy. Pour in the water and pulse until a smooth and firm dough forms.

Transfer the dough on a clean and lightly floured working surface. Knead the dough and shape it into a ball. Cut in half and flatten the halves into 2 discs. Wrap them in plastic and let sit in refrigerator until ready to use.

Meanwhile, make the filling: Heat the vegetable oil in a saucepan over medium heat.

Add the onion and sauté for 5 minutes or until lightly browned.

Add the coriander, cumin, garlic, turmeric, and salt and sauté for 2 minutes or until fragrant.

Add the peas, potatoes, and yogurt and stir to combine well. Turn off the heat and allow to cool.

Meanwhile, combine the ingredients for the chutney in a food processor. Pulse to mix well until glossy. Pour the chutney in a bowl and refrigerate until ready to use.

Make the samosas: Remove the dough discs from the refrigerator and cut each disc into 8 parts. Shape each part into a ball, then roll the ball into a 6-inch circle. Cut the circle in half and roll each half into a cone.

Scoop up 2 tablespoons of the filling into the cone, press the edges of the cone to seal and form into a triangle. Repeat with remaining dough and filling.

Spritz the air fryer basket with cooking spray. Arrange the samosas in the pan and spritz with cooking spray.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 360ºF (182ºC) and set time to 15 minutes.

Flip the samosas halfway through the cooking time.

When cooked, the samosas will be golden brown and crispy.

Serve the samosas with the chutney.
