Crunchy Green Tomatoes Slices
Prep time: 10 minutes | Cook time: 8 minutes | Makes 12 slices
½ cup all-purpose flour
1 egg
½ cup buttermilk
1 cup cornmeal
1 cup panko
2 green tomatoes, cut into ¼-inch-thick slices, patted dry
½ teaspoon salt
½ teaspoon ground black pepper
Cooking spray
  1. Spritz a baking sheet with cooking spray.
  2. Pour the flour in a bowl. Whisk the egg and buttermilk in a second bowl. Combine the cornmeal and panko in a third bowl.
  3. Dredge the tomato slices in the bowl of flour first, then into the egg mixture, and then dunk the slices into the cornmeal mixture. Shake the excess off.
  4. Transfer the well-coated tomato slices in the baking sheet and sprinkle with salt and ground black pepper. Spritz the tomato slices with cooking spray.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 8 minutes.
  6. Flip the slices halfway through the cooking time.
  7. When cooking is complete, the tomato slices should be crispy and lightly browned. Remove the baking sheet from the oven.
  8. Serve immediately.
