Southwest Corn and Bell Pepper Roast
Prep time: 10 minutes | Cook time: 10 minutes | Serves 4
Corn:
1½ cups thawed frozen corn kernels
1 cup mixed diced bell peppers
1 jalapeño, diced
1 cup diced yellow onion
½ teaspoon ancho chile powder
1 tablespoon fresh lemon juice
1 teaspoon ground cumin
½ teaspoon kosher salt
Cooking spray
For Serving:
¼ cup feta cheese
¼ cup chopped fresh cilantro
1 tablespoon fresh lemon juice
  1. Spritz the air fryer basket with cooking spray.
  2. Combine the ingredients for the corn in a large bowl. Stir to mix well.
  3. Pour the mixture into the basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC) and set time to 10 minutes.
  5. Stir the mixture halfway through the cooking time.
  6. When done, the corn and bell peppers should be soft.
  7. Transfer them onto a large plate, then spread with feta cheese and cilantro. Drizzle with lemon juice and serve.
