Garlicky Spiralized Zucchini and Squash
Prep time: 10 minutes | Cook time: 10 minutes | Serves 4
2 large zucchini, peeled and spiralized
2 large yellow summer squash, peeled and spiralized
1 tablespoon olive oil, divided
½ teaspoon kosher salt
1 garlic clove, whole
2 tablespoons fresh basil, chopped
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Combine the zucchini and summer squash with 1 teaspoon of the olive oil and salt in a large bowl. Toss to coat well.
  3. Transfer the zucchini and summer squash to the basket and add the garlic.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 360ºF (182ºC) and set time to 10 minutes.
  5. Stir the zucchini and summer squash halfway through the cooking time.
  6. When cooked, the zucchini and summer squash will be tender and fragrant. Transfer the cooked zucchini and summer squash onto a plate and set aside.
  7. Remove the garlic from the oven and allow to cool for 5 minutes. Mince the garlic and combine with remaining olive oil in a small bowl. Stir to mix well.
  8. Drizzle the spiralized zucchini and summer squash with garlic oil and sprinkle with basil. Toss to serve.
