Baked Cherry Tomatoes with Basil
Prep time: 5 minutes | Cook time: 5 minutes | Serves 2
2 cups cherry tomatoes
1 clove garlic, thinly sliced
1 teaspoon olive oil
⅛ teaspoon kosher salt
1 tablespoon freshly chopped basil, for topping
Cooking spray
  1. Spritz the baking pan with cooking spray and set aside.
  2. In a large bowl, toss together the cherry tomatoes, sliced garlic, olive oil, and kosher salt. Spread the mixture in an even layer in the prepared pan.
  3. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 360ºF (182ºC) and set time to 5 minutes.
  4. When cooking is complete, the tomatoes should be the soft and wilted.
  5. Transfer to a bowl and rest for 5 minutes. Top with the chopped basil and serve warm.
