2 (7½-ounce / 213-g) packages farmer cheese, mashed
¼ cup cream cheese
¼ teaspoon vanilla extract
¼ cup granulated white sugar
8 egg roll wrappers
4 tablespoons butter, melted
  1. Combine the farmer cheese, cream cheese, vanilla extract, and sugar in a bowl. Stir to mix well.
  2. Unfold the egg roll wrappers on a clean work surface, spread ¼ cup of the filling at the edge of each wrapper and leave a ½-inch edge uncovering.
  3. Wet the edges of the wrappers with water and fold the uncovered edge over the filling. Fold the left and right sides in the center, then tuck the edge under the filling and fold to wrap the filling.
  4. Brush the wrappers with melted butter, then arrange the wrappers in a single layer in the air fryer basket, seam side down. Leave a little space between each two wrappers.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC) and set time to 10 minutes.
  6. When cooking is complete, the wrappers will be golden brown.
  7. Serve immediately.
