Teriyaki Shrimp Skewers
Prep time: 10 minutes | Cook time: 6 minutes | Makes 12 skewered shrimp
1½ tablespoons mirin
1½ teaspoons ginger juice
1½ tablespoons soy sauce
12 large shrimp (about 20 shrimps per pound), peeled and deveined
1 large egg
¾ cup panko bread crumbs
Cooking spray
  1. Combine the mirin, ginger juice, and soy sauce in a large bowl. Stir to mix well.
  2. Dunk the shrimp in the bowl of mirin mixture, then wrap the bowl in plastic and refrigerate for 1 hour to marinate.
  3. Spritz the air fryer basket with cooking spray.
  4. Run twelve 4-inch skewers through each shrimp.
  5. Whisk the egg in the bowl of marinade to combine well. Pour the bread crumbs on a plate.
  6. Dredge the shrimp skewers in the egg mixture, then shake the excess off and roll over the bread crumbs to coat well.
  7. Arrange the shrimp skewers in the basket and spritz with cooking spray.
  8. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 6 minutes.
  9. Flip the shrimp skewers halfway through the cooking time.
  10. When done, the shrimp will be opaque and firm.
  11. Serve immediately.
