Marinara Sauce
Prep time: 15 minutes | Cook time: 30 minutes | Makes about 3 cups
¼ cup extra-virgin olive oil
3 garlic cloves, minced
1 small onion, chopped (about ½ cup)
2 tablespoons minced or puréed sun-dried tomatoes (optional)
1 (28-ounce / 794-g) can crushed tomatoes
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
1 teaspoon kosher salt or ½ teaspoon fine salt, plus more as needed
-
Heat the oil in a medium saucepan over medium heat.
-
Add the garlic and onion and sauté for 2 to 3 minutes, or until the onion is softened. Add the sun-dried tomatoes (if desired) and cook for 1 minute until fragrant. Stir in the crushed tomatoes, scraping any brown bits from the bottom of the pot. Fold in the basil, oregano, red pepper flakes, and salt. Stir well.
-
Bring to a simmer. Cook covered for about 30 minutes, stirring occasionally.
-
Turn off the heat and allow the sauce to cool for about 10 minutes.
-
Taste and adjust the seasoning, adding more salt if needed.
-
Use immediately.
