Classic Marinara Sauce
Prep time: 15 minutes | Cook time: 30 minutes | Makes about 3 cups
¼ cup extra-virgin olive oil
3 garlic cloves, minced
1 small onion, chopped (about ½ cup)
2 tablespoons minced or puréed sun-dried tomatoes (optional)
1 (28-ounce / 794-g) can crushed tomatoes
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
1 teaspoon kosher salt or ½ teaspoon fine salt, plus more as needed
  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the garlic and onion and sauté for 2 to 3 minutes, or until the onion is softened. Add the sun-dried tomatoes (if desired) and cook for 1 minute until fragrant. Stir in the crushed tomatoes, scraping any brown bits from the bottom of the pot. Fold in the basil, oregano, red pepper flakes, and salt. Stir well.
  3. Bring to a simmer. Cook covered for about 30 minutes, stirring occasionally.
  4. Turn off the heat and allow the sauce to cool for about 10 minutes.
  5. Taste and adjust the seasoning, adding more salt if needed.
  6. Use immediately.
