Roasted Mushroom

Prep time: 8 minutes | Cook time: 30 minutes | Makes about 1½ cups
1 pound (454 g) button or cremini mushrooms, washed, stems trimmed, and cut into quarters or thick slices
¼ cup water
1 teaspoon kosher salt or ½ teaspoon fine salt
3 tablespoons unsalted butter, cut into pieces, or extra-virgin olive oil

Place a large piece of aluminum foil on the sheet pan. Place the mushroom pieces in the middle of the foil. Spread them out into an even layer. Pour the water over them, season with the salt, and add the butter. Wrap the mushrooms in the foil.

Select Roast, set the temperature to 325ºF (163ºC), and set the time for 15 minutes. Select Start to begin preheating.

Once the unit has preheated, place the pan in the oven.

After 15 minutes, remove the pan from the oven. Transfer the foil packet to a cutting board and carefully unwrap it. Pour the mushrooms and cooking liquid from the foil onto the sheet pan.

Select Roast, set the temperature to 350ºF (180ºC), and set the time for 15 minutes. Return the pan to the oven. Select Start to begin.

After about 10 minutes, remove the pan from the oven and stir the mushrooms. Return the pan to the oven and continue cooking for anywhere from 5 to 15 more minutes, or until the liquid is mostly gone and the mushrooms start to brown.

Serve immediately.
