Poached Tofu with Spicy Sauce

2 liters (8 cups) water

250 g (9 oz) medium or firm tofu

1 tablespoon garlic, minced

1 tablespoon ginger, minced

3 spring onions, minced

1 sprig fresh coriander leaves (cilantro), minced

Sauce

1 tablespoon sesame oil

1 tablespoon chilli oil

1 tablespoon soy sauce

1 teaspoon black pepper

½ teaspoon salt

1 teaspoon sugar

 

1 Bring the water to a boil in a medium pot, carefully add the tofu cake, reduce the heat and simmer for 4 minutes. Remove with a slotted spoon and drain. Alternatively, place the tofu in a steamer and steam for 4 minutes.

2 Mix all the Sauce ingredients well and set aside.

3 Place the garlic, ginger, and spring onions in a bowl. Pour the Sauce onto the garlic, ginger and spring onions and blend well. Place the tofu in the center of a small serving dish. Make 4 cuts across the top of the tofu in both directions, cutting no more than halfway deep. Drizzle the Sauce mixture evenly over the tofu and serve.
