A lifesaver when you’re busy! I normally make three servings at once and keep them in the fridge (just scale the recipe up to do the same), so that they’re ready to go in the morning. I find that it’s delicious just as it is thanks to the grated apple and raisins, but you can also add a little syrup or honey as suggested in the recipe if you like.

BIRCHER MUESLI

Serves 1

1 apple

generous 1/2 cup rolled oats

1/4 cup raisins

5 teaspoons sunflower seeds

1 tablespoon chia seeds

generous 1/2 cup cashew milk (or any other plant-based milk)

1 teaspoon maple syrup, date syrup or honey (optional)

handful of blueberries, raspberries or strawberries (optional)

Grate the apple into a bowl, then add all the other ingredients and stir it all together.

Place the mixture into an airtight jar and leave in the fridge for about 6 hours to allow the oats to soften and absorb the milk. Then continue to store in the fridge for up to 3 days. Return to room temperature to serve.

Tweak It

If you want to make this extra creamy, add 1 tablespoon of coconut yogurt; it creates the most wonderful texture.
