If you’re not a fan of oats—or find that you’re getting bored with traditional oatmeal—then this quinoa version will make you really happy! Using quinoa will give you great energy for the day, as it’s full of plant-based protein. It also tastes delicious as each bite is bursting with hints of honey, banana and ginger.

QUINOA AND GINGER PORRIDGE

Serves 1

1/3 cup quinoa

1/2 cup plus 2 tablespoons plant-based milk

1 tablespoon honey

1 banana

1/2 teaspoon ground ginger

Place the quinoa in a saucepan with 2/3 cup of boiling water, the milk and honey and allow the mixture to come to a boil.

Once the porridge is boiling, reduce the heat and simmer for about 15 minutes, until the quinoa is fluffy and most of the liquid has been absorbed (you don’t want it to be dry though).

About 5 minutes before the porridge is ready, slice the banana into the mixture and stir in the ginger, then let everything cook together for the remaining time before serving.

Tweak It

Try adding lots of nuts, seeds and raisins to this to make it extra delicious.
