KETO BREAKFAST RECIPES

Enjoy these low carb muffins especially on a cold morning. These moist and fully satisfying muffins are pleasantly tasty with a spread of butter.



Lemon Blueberry Muffins

Yields: 15 muffins

Ingredients

2 eggs

1 cup heavy cream

4 ounces fresh blueberries

2 cups Almond Flour

½ tsp. baking soda

1/8 cup melted butter

½ tsp flavoring or lemon extract

5 packets splenda, stevia or any other artificial sweetener

½ tsp dried lemon zest

¼ tsp. salt



Directions:

1. Preheat oven to 350 Fahrenheit degrees. Place the cupcake papers in separate muffin holes of standard sized 12 count muffin pan.

2. Combine cream and almond flour. Add eggs one after the other, and stir until it is well mixed.

3. Add sweetener, butter, flavoring, spices, baking soda and mix.

4. Add blueberries and mix until it is evenly distributed.

5. Next, spoon the mixture into pan, ensuring each cupcake paper is about 1/2 full.

6. Bake until golden or for about 20 minutes. Leave it to cool. Serve with butter.
