Tasty Cheese Muffins
2 eggs
½ tsp. baking soda
1/8 cup melted butter
2 cups Almond Flour
½ tsp dried thyme
1 cup of sour cream
½ cup shredded Muenster
1 cup shredded cheddar or Colby jack
¼ tsp. salt
Directions:
1. Preheat oven to 400F degrees. Place the cupcake papers in separate muffin holes of standard sized 12 count muffin pan.
2. Combine the dry ingredients and almond flour.
3. Get a separate bowl, break and beat the eggs lightly in it and then add sour cream and butter and mix.
4. Add the liquid mixture to the mixture of almond flour. If it seems too thick, add 1 tablespoon of heavy cream or water.
5. Add cheese and mix together until it is evenly distributed.
6. Spoon mixture into muffin pans, ensuring each is about 3/4 full.
7. Bake for 5 minutes at 400 degrees.
8. Turn down the oven temp to 350 then bake for another 20- 25 minutes or until golden. Leave it to cool. Serve with butter.
