Chicharrones Con Huevos

Ingredients

1 medium Avocado

1/4 cup Cilantro, chopped

5 large Eggs

4 slices Bacon

1 medium Tomato

2 medium Jalapeno Peppers, de-seeded

1.5 oz. Pork Rinds

1/4 medium Onion

Salt and Pepper to Taste



Directions:

1. Cook the bacon and transfer to paper towel. Keep the bacon fat in the pan.

2. Next, cook the pork rinds in the bacon fat and add the diced vegetables.

3. Add cilantro once the onions are almost translucent and then mix together.

4. Now add pre-scrambled eggs, leave to cook and stir once.

5. Cube avocado and fold into eggs. Enjoy!
