Butter Hardboiled Eggs
Ingredients
2 whole Eggs
30g Butter
1 tbsp Mascarpone
Salt &pepper to taste
Directions:
1. Hard boil the eggs in a pot. Add a pinch of salt to it so the eggs will peel better once done.
2. Wash the boiled eggs with cold water. Peel and chop into a large cup.
3. Next, add the mascarpone cheese and butter while the eggs are still hot, mixing well. Season with salt and pepper.

Chia Sunrise Custard
2 tbsp chia seeds
1/4 cup heavy cream
1 egg yolk
20 drops liquid stevia extract (10 drops each French Vanilla & English Toffee)
1/2 cup water
1 pinch salt
Directions:
1. Put the chia seeds in a small bowl, add the water and stir. Keep refrigerated overnight.
2. Remove from fridge in the morning. Use a fork to stir and break up clumps.
3. Pour the cream into a measuring cup. Add the egg yolk alone and stir together with a fork.
4. Stir in the salt and liquid stevia extract.
5. Pour the mixture into the chia seeds, stirring thoroughly again to break up any clumps. (Use a glass custard cup so it’s easy to see through any stubborn clumps of chia seed).
6. Put the chia custard in the microwave, set on power 5 and leave for 1 minute. Stir, leave for another 1 minute and then turn it off.
7. Enjoy with sprinkled sugar-free chocolate chips, pancake syrup or a cinnamon.
