Crunchy Skin Pork Shoulder

Ingredients
8 lbs. Pork Shoulder
1 tsp. Onion Powder
1 tsp. Garlic Powder
2 tsp. Oregano
1 tsp. Black Pepper
3 1/2 tbsp. Salt
Directions
1. Wash the pork, dry it and let it come to room temperature.
2. Preheat oven to 250 F. Rub spices and salt over the pork shoulder.
3. Place onto a wire rack over a foil-covered baking sheet. Bake for 8-10 hours, depending on size or until the internal temperature is about 190F.
4. Take out meat from oven, cover with foil and let it rest for 15 minutes.
5. Meanwhile, heat oven to 500F. Take out foil and roast the pork for another 20 minutes, 500F in total and rotating every 5 minutes.
6. Let the pork rest for about 20 minutes. Cut and serve.
