Stuffed Roasted Chicken With Gravy

Ingredients
10 strips bacon
1 Whole Chicken, gutted (3 lbs.)
4 sprigs Fresh Thyme
1 small Lime
1 tbsp. Grain Mustard
1 medium Lemon
Salt & Pepper to Taste
Directions
1. Preheat oven to 500F.
2. Next, season chicken with salt and pepper. Stuff it with thyme, lime and lemon.
3. Wrap the bacon over bird skin and season the bacon with salt & pepper.
4. Next, place bird in roasting pan; put it inside the oven for about 15 minutes. Reduce temperature to 350F then bake for 40-50 minutes more.
5. Remove the chicken and place in foil. Put the pan juices in a pan and then bring to a boil.
6. Add mustard to the pan liquids, mix well and reduce slightly
7. using an immersion blender, blend the sauce in the pan.
8. Serve the chicken with gravy.
