Fig Porridge
Serve this in the summer, when fresh figs are plenty. Take time the night before to do the prep. If you’re using dried figs, soak them in water for 1 or 2 hours. Rolled oats may be substituted for the steel cut oats. Rolled oats are lighter than steel cut oats and only need to be soaked for 1 hour in water.

Ingredients
1 cup steel cut oats, presoaked for 6 to 8 hours
1⁄2 cup walnuts, soaked
1⁄2 cup figs, chopped
1 tablespoon honey
1 teaspoon vanilla extract
1⁄4 cup goji berries, soaked (optional)
- Place the soaked oats and walnuts into a food processor and process until smooth and creamy.
- Add the remaining ingredients and continue processing until well mixed and chunky.
