Pear Crepes

These are delicious wraps to serve for breakfast. The pears can be replaced with other fresh fruits in season.

Serves 4

Ingredients

2 cups young coconut meat

4 cups pear, chopped

2 cups sliced banana

  1. Place the coconut meat and pear in a blender and blend until smooth. Spread the blended mixture onto dehydrator trays with nonstick sheets. Dehydrate at 115°F for 4 hours to make fruit leathers. Score leathers into round circles, approximately 8" in diameter.
  2. Mash the banana with a fork. Place a round fruit leather on a plate and spread a layer of mashed banana on top. Roll it up into a crepe shape.
  3. Place the crepe rolls on a plate and cover with your favorite sauce.
