Coriander Chili Cashews

This is a crunchy snack with a sweet and spicy flavor. It is a good snack to travel with and will store for a month in airtight containers.

Serves 4

Ingredients

2 cups cashews

14 cup olive oil

3 tablespoons coriander seed powder

4 tablespoons agave nectar

2 teaspoons chili powder

1 teaspoon salt

  1. Soak the cashews for 6  to 8 hours. Rinse and drain.
  2. In a large mixing bowl, stir all ingredients together.
  3. Spread the cashews onto dehydrator trays.
  4. Dehydrate at 110°F for 24 hours or until the desired texture is reached.
