MANGO-ALMOND LASSI WITH CARDAMOM
I love the idea of a lassi, the soothing Indian yogurt drink that can be salty or sweet, but too often when I order one to go with a curry, it ends up way too sweet and heavy for the meal. Here I take the concept and make a whole breakfast out of it, with less sugar, more fruit, and some almond butter blended in to make the shake satisfying until lunch.
In a blender, combine 1 cup peeled, diced fresh mango, 1 tablespoon almond butter, ½ cup plain kefir (or ⅔ cup plain Greek yogurt mixed with 4 tablespoons water), 1 pinch ground cardamom, 1 teaspoon agave syrup, an optional pinch of salt, and ½ cup of ice. Blend on high until very smooth.
