To make a piece of fruit seem a little more, well, dessertlike, it pays to frame it well. Slice your apples elegantly, or place your berries in a beautiful bowl. Grate a bit of citrus zest on top or add a pinch of flaky Maldon sea salt. And give your fruit a lovely accent such as this soft floral sauce. A bit of steeped chamomile adds a sunny floral flavor to this sweetened dressing, which elevates the best fruit of any season. If you can locate fresh chamomile flowers or whole dried ones—which are commonly available in the bulk section of the natural foods store—you can sprinkle a few on your fruit along with the dressing for a bit of extra loveliness. If not, you can steep chamomile tea bags instead.
• 2 tablespoons dried chamomile or about 6 tea bags
• ½ cup boiling water
• 2 teaspoons honey
• ½ cup sheep’s milk yogurt or other plain yogurt
• Additional chamomile blossoms (dried or fresh), for garnish (optional)
Place the chamomile in a mug or small bowl. Pour in the boiling water and let it infuse for 5 minutes. Strain and measure 2 tablespoons of the chamomile infusion into a medium bowl. Stir the honey into the warm infusion, then the yogurt. Sprinkle with the chamomile blossoms, if using, and serve with fruit.
Do ahead: The dressing will keep 1 week in the refrigerator; stir before serving to reemulsify.
