roasted seaweed snacks
Crisp and flavoursome, seaweed chips are a popular and healthy packaged snack, but they’re very easy to make from scratch. You can play around with the seasonings: add more chilli powder, use paprika instead or leave out the sugar. Go easy with the salt as they don’t need very much.

60 ml (2 fl oz/¼ cup) vegetable oil
2 tablespoons sesame oil
½ teaspoon chilli powder
2 teaspoons soft light brown sugar
4 nori sheets
sea salt flakes, for sprinkling
Heat the oven to 170°C (325°F/Gas 3). Mix together the oils, chilli powder and sugar in a small bowl. Very lightly brush each nori sheet with the oil mixture right up to the edges. Cut each sheet into quarters and then cut each quarter in half to make 8 rectangles. Transfer to a baking tray and roast for about 25 minutes, or until starting to crisp up and pucker. They will crisp up further as they cool. Sprinkle with a touch of salt, as desired.
