Bilberries are a woodland fruit that are so full of flavour and colour that they dye your mouth black when you eat them. Blueberries are less potent in comparison, but if you cannot get hold of bilberries then do use blackberries instead. {Serves 1}
2 tablespoons bilberries or blackberries
1 tablespoon brown sugar
50 ml (2 fl oz/scant ¼ cup) good-quality vodka
½ lime, quartered
50–100 ml (2–3½ fl oz/scant ¼–½ cup) soda water
Add the bilberries, brown sugar and vodka into a blender and roughly blitz. Then with a pestle and mortar, grind (mull) the lime quarters. Mix the lime juice and lime pieces into the blended mixture. Fill a tall glass with crushed ice and pour the cocktail over the top. Top up with soda water, mix gently and serve.
