Gremolata 2.0

Gremolata is a zesty, herby Italian condiment that you can use on all sorts of dishes, from fish to vegetables. Although gremolata is traditionally made using a combination of lemon, parsley, and garlic, I updated it with a few new flavors and textures like bright cilantro and crunchy pistachios. This particular version is a perfect topping for grilled swordfish, asparagus, roasted potatoes, and shrimp.

Makes about 1 cup

In a small bowl, combine the garlic, pistachios, parsley, cilantro, olive oil, salt, lemon zest, lemon juice, and red pepper flakes and stir thoroughly to combine. Use immediately.
