The first time I made this guacamole, the addition of the pine nuts was completely accidental. I was making fajitas and enlisted the help of our then five-year-old. I asked her to add the pine nuts to our side salad, but they ended up in the guacamole instead. Ohh, the wonders of having “helpers” in the kitchen . . . but it worked! Who knew the nuttiness of the pine nuts could be such a complement to the cool freshness of the avocados?
Makes 1½ cups
In medium bowl, combine the avocados, garlic, cilantro, lime juice, smoked paprika, salt, and red pepper flakes. Use a fork to mash the mixture until well combined but still slightly chunky. Stir in the pine nuts. Use immediately.
