When I get a craving for something sweet, this apple stack always does the trick. While it’s still definitely a sweet treat, it doesn’t leave me feeling the adverse effects that something like a slice of cheesecake would. Needless to say, it makes a great after-school snack for the kiddos.
Makes 1
Spread 1 tablespoon of the cashew butter onto a slice of apple. Drizzle 1½ teaspoons of the coconut butter over the cashew butter and top with 1 tablespoon of the dried cranberries and 1 tablespoon of the walnut pieces. Drizzle the apple slice with ¾ teaspoon of the honey and sprinkle ¾ teaspoon of the shredded coconut over the top. Repeat to make 3 additional slices.
Stack the slices on top of one another and serve.
