I’m not going to say these apples would be amazing served up with some ice cream, because, frankly, they don’t need it—even though I know you’re itching to do it! These are amazing as is, but the struggle is real and the choice is yours.

Preheat the oven to 375°F.
Carefully core the apples but do not cut all the way through the bottom. You want a roughly 2-inch-wide cavity. Set aside.
In a small bowl, thoroughly combine the coconut sugar, oats, walnuts, cranberries, butter, coconut, flaxseed, cinnamon, and salt. Stuff one-quarter of the filling into each apple.
Fill an 8-inch square baking pan with ½ inch of water. Place the apples upright in the pan and bake for 45 minutes, until the apples are tender but not falling apart. Transfer to individual bowls and serve.
