Parmesan Herb Muffins

Savory muffins are an alternative to breads on your dinner table, and because no yeast is used they can be on the table quickly. These go very well with a simple entrée like roast chicken or grilled fish.

3/4 cup white rice flour

1/2 cup potato starch

1/4 cup tapioca flour

2 teaspoons gluten-free baking powder

2 teaspoons Italian seasoning

1/2 teaspoon baking soda

1/2 teaspoon xanthan gum

1/2 teaspoon salt

Freshly ground black pepper to taste

3/4 cup whole milk

2 large eggs, beaten

1/2 cup olive oil

3 tablespoons chopped fresh parsley

1 cup freshly grated Parmesan cheese, divided

2 garlic cloves, minced

1. Preheat the oven to 400°F, and grease a 12-cup muffin pan; you can also use paper liners and spray the top of the pan with vegetable oil spray.

2. Combine rice flour, potato starch, tapioca flour, baking powder, Italian seasoning, baking soda, xanthan gum, salt, and pepper in a large mixing bowl, and whisk well. Add milk, eggs, oil, parsley, 2/3 cup cheese, and garlic. Stir gently to wet flour, but do not whisk until smooth; batter should be lumpy. Fill each prepared cup 2/3 full, and sprinkle with remaining cheese.

3. Bake muffins for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Place muffin pan on a cooling rack for 10 minutes, then serve—either hot or at room temperature.

Variations

Images Add 1/2 cup sun-dried tomatoes packed in olive oil, drained and chopped. Use the olive oil from the tomatoes as part of the oil for the recipe.

Images Substitute dried oregano for the Italian seasoning, and add 1 tablespoon grated lemon zest.

A display rack with pretty glass bottles over the stove is about the worst place to put dried herbs and spices because both heat and light are foes of these foods. Keep them in a cool, dark place to preserve their potency. The best test for freshness and potency is to smell the contents. If you don’t smell a strong aroma, you need a new bottle.
