This is the end of the week and you have made it. How do you feel? It is the last day and I am sure you are itching to know what I have in store for you today. Me too! I believe that Baked Apple Pancakes are the first order of the day. These are saved for very special occasions in our home, like Christmas morning or special guests.
BAKED APPLE PANCAKES
¼ cup (60 ml) butter
1/3 cup (85 ml) brown sugar
1 tsp. (5 ml) cinnamon
3 large eggs
¾ cup (175 ml) unbleached flour
¾ cup (175 ml) milk
¼ tsp. (1.25 ml) salt
3 large apples, peeled and cored and thinly sliced
Preheat oven to 375° F (190° C). Place butter in 8” glass pie pan (or square glass pan)
Place pie plate in oven until the butter is melted, about 5 minutes. Remove from oven. Sprinkle cinnamon and brown sugar over melted butter.
Layer apple slices over brown sugar and sprinkle with a little more cinnamon (it will appear to fill the whole pan but the apples will shrink a little as they cook).
Place pan in oven for 10 – 15 minutes to soften apples. Meanwhile, mix together the flour, eggs, milk and salt. Whisk until almost smooth—lumps are fine. When the apples are softened, remove the pan and slowly pour the batter all over the top.
Return to the oven and bake another 35 to 45 minutes until you have a very puffy pancake. A knife inserted into the middle should come out clean.
Note: The pancake will look amazing as soon as it comes out of the oven. Show it off. However, within minutes it will fall in and appear to be a failure. It isn’t; the eggs just cause it to do that. To serve, cut into pieces and flip each piece upside down into a plate and serve.
P.S. This is extremely hot, so please let cool down a little before you partake.
